Bring large pot of water to a boil and add 1 tablespoon of salt.
Meanwhile, in large skillet, heat the cream, butter, 1 teaspoon salt, and 1/2 teaspoon pepper over very low heat and mix to combine. Keep the butter and cream over very low heat.
Add the pasta to the boiling water and cook according to package directions. If using Cipriani brand, it’ll only be 3 minutes. When the pasta is cooked, reserve some cooking liquid and drain the pasta. Add the drained pasta to the butter and cream. Add as much of the pasta water as needed to keep the pasta very creamy.
Garnish with with chives and shaved Parmesan.
If you don’t have tagliarelle (aka tagliatelle), fettuccine works well.
